Baked Egg Avocado Boats (Whole30, Paleo, & Gluten free)

You’ll Need:

  • 2 avocados
  • 4 eggs
  • salt & pepper to taste
  • Optional: fresh chopped herbs or salsa for topping


  1. Preheat oven to 425 degrees.
  2. Slice your avocados in half. Remove the pit. Scoop out a bit more to ensure you have room for your egg.
  3. On a baking sheet crack an egg in the center of each avocado half.
